When I was going through the sales ads of the grocery store down the street last night I had an idea for a new recipe: fish tacos with mango-pineapple salsa (mangoes are on sale). I love it when I think of something far enough in advance so I have time to plan it in my head and go shopping for ingredients. 🙂
1 20 oz can pineapple tidbits, well drained
1 mango, diced
1/2 cup sweet onion, finely diced
1/4 cup cilantro leaves, chopped
1 jalapeno, seeds removed & minced
Salt & pepper to taste
In a small bowl, combine ingredients. Refrigerate at least 2 hours before serving so flavors can blend.
